Le Brie
(Also available in Mild & Creamy recipe – which is a milder and more consistent recipe over time)
Brie earned the title "king of cheeses" centuries ago, but still lives up to it today. Cœur de Lion Le Brie is characterized by a delicious full bodied taste, which becomes stronger as the cheese ages. This evolution goes hand in hand with the transformation of the cheese's texture, from chalky, to creamy.
Wine suggestions
Serve with a medium bodied red, such as a Languedoc. If you feel like splashing out, Brie is delicious with Champagne!
Food suggestions
Brie is delicious accompanied by apple slices and crusty baguette.
La Buche
Produced in western France, Cœur de Lion La Buche goats' cheese brings a little originality to a cheeseboard. La Buche has a soft creamy heart and a fresh well-rounded taste, without the sharpness often associated with goats' cheese.
Wine suggestions
Round off the tartness of the goats' cheese with a light Sauvignon Blanc.
Food suggestions
One of the best ways to eat goats' cheese is warm, tossed in a salad with some walnuts.
Chavroux
With its soft and amazingly fresh texture, this creamy goats' cheese melts in your mouth. It has a well-balanced rounded flavor and a striking pyramid shape which is very impactful on the cheeseboard. It is delicious spread on a crusty slice of bread and enjoyed with a glass of light white wine.
Wine suggestions
A fresh cheese like Chavroux is delicious served with a glass of sparkling white wine, such as Prosecco.
Food suggestions
A fresh cheese like Chavroux tastes superb rolled up in some smoked salmon and seasoned with fresh herbs.
